I got the answer, for anyone who's interested. One company (at least)
uses encryption during swiping, so information can be uploaded later.
This way iPod touch and iPad WIFI can be used as a credit card
terminal, in store & forward mode (without the need for a live
connection). Of course you won't be able to get approval on the spot,
so that risk remains. I haven't finished signing up yet , so can't
comment on the service or support, but I'd be happy to post the rates
if there's interest.
