Kim, Photoshop is very intimidating. There is some "good news": photographers usually don't use all of photoshop's features, and there are marvelous plug-ins that will do a lot for you, protecting you from the details of photoshop. My opinion is you need to master cloning so you can get rid of those things you wish weren't there, and layers and masking. Then some select plugins that do the kind of work you want to do on your photos. What version of Photoshop do you have?

If you shoot RAW (or even if you don't, actually), Adobe Camera Raw is much easier to use than photoshop's own tools.

Or you could give up on photoshop and get something easier to use (which will no doubt also be WAY cheaper!).

Another option, since it appears you don't desire to do a lot of post processing, is to get Lightroom. This is a catalog program which also has certain types of image editing, as well as printing and some other things I don't use. Image editing with Lightroom is the same as Adobe Camera Raw. But using these through Lightroom is easier than with Photoshop because you can see multiple pictures in Lightroom, copy edits from one picture to another, etc. The larger your collection gets the more likely you will be able to make use of a catalog program like Lightroom. You can evaluate Lightroom for a month for free.

I own Photoshop and did finally install it on my computer, but I am very intimidated by it. I would rather spend what little time I have on the weekends shooting than learning how to use it. Knowing that my editing abilities are limited does drive me to make better photographs.
