Hi Matthew and welcome.
For me one of the best introductions to Art Fairs is a book my one of the members here. Art Festival Guide by Maria Arango. Google it. It answers all the questions you don't even know you don't know.
Also - one thing I have noticed this is my 1st year) is that people love to meet the artist and even though it seems obvious - love your own work and be excited about the whole process. I see so many booths where people sit and almost frown.
This year was a test year, dipping my toes in the water to see how it was. I did not want to have huge expectations and be let down.
also realize (and I poo pooed this at first) that is really IS a lot of work. In fact the more shows I do the more work it is! Plus - the 1st year cost me a GOB of money. Filling a canopy with art (I only display 17 large images but have many 8x12s) costs money (more ant I anticipated actually) and since you really do not know what sells yet . . . . . .
Hope it's a starting point

I just recently entered a photography contest at the local fair and one 3 first place and 2 third place. That helped me make the decision that I should definitely pursue selling my prints.
