A $250 fee for a single day show is rather expensive unless it is a very high end very popular show.
75 8x10s is a LOT for your very first show. My suggestion would have been to start minimal and add as you get a feeling of what type of your photographs are selling so you won't have a lot of money spent in stock that doesn't sell. It's better to sell most of what you have than to bring and prepare so much that is not popular and just doesn't sell. I'm sure you love all your photographs, but it's hard to anticipate what the art buying public will love!
As far as 8x10 vs. 8x12. How I did it was to just use 8x10 images and not also 8x12. I have no idea if you are referring to print sizes or matted sizes. I cropped images to 4:5 (8x10) and if it really ruined the image I just did not provide it in an 8x10 print. I saved it for 13x19. 8x12 is not a common frame size.
I've found that it is original, unique, and exceptional photographs that generally sell best. If buyers think they can take the same picture, they of course won't buy. Good luck.
