John,
I understand where you are coming from but (you knew there had to be a but) I use IR to shoot at midday, for long range scenic panorama vistas (bodies of water with trees along the shore come out particularly nice), out airplane windows (to cut through the haze), harsh light/shadow conditions, and for architectural subjects as well. People shots can be fun and funky too. I have found that it still has to be well composed to be good in IR, just taking a photo in IR doesn't make it good, the same goes for HDR. I have an idea for an IR,HDR, pano someday, I've previsualized it, now I just need to commit to the 1/2 hour or so of shooting time and then another hour or so processing. I shoot mostly B&W IR as color is just too much work for me and I have a hard time getting the colors the way I want them.
