As long as you can profile the monitor you should be fine. I have an Apple 27" as my primary display but also bought an Eizo CG222W. I use the Eizo as the primary display for photoshop and lightroom. Much better control with the profiling. Got a good price so that's why I got it. Running a MacPro tower. But I have good things about the iMacs. Best advice...buy the fastest, most memory, best graphics card, largest drive (if it only has one internal) that you can afford. Don't look back. It's always cheaper tomorrow :)
