Hi Sarah,
One thing that no one has mentioned is that you will be learning a new operating system. What ever you are told the MAC is different, not better than the PC, nor is it easier to use. Even though you would probably be very happy with a MAC, plan on spending time relearning the basic differences. Also be aware that even though programs like Photoshop operate basically the same on both platforms, there are some minor differences. My suggestion is if you know the PC so stick with it and if you know the MAC stick with that. There is no real advantage using a MAC as the advantages that MAC had have evaporated. I have nothing against Apple products as I have two IPods, and carry of many photos and videos on my IPod Touch, plus thinking of a IPAD. Here me Santa? My two cents.

Your investment in a Mac will pay off in faster operation, greater reliability, and better customer support. Therefore, i urge you not to cut too many corners, but to invest what you can afford.
A large monitor is a definite asset. Get as much RAM as you can afford--probably at least 8GB; the Adobe products, combined with the Mac OS, can use more than the 4GB that were the previous maximum. Get a 1TB disc--you will be surprised how fast disk space is consumed. Also, a Mac Pro is preferable to a Mac Mini for expandability. All that will cost you closer to $2000+, but it will pay for itself in the long run.
I also use a Spyder II for calibration. It works fine.
