Are you printing the canvas yourself? If so, you can sign the canvas with a Sharpie or a paint pen - both of which I use - before you spray it with varnish.
If you are having someone else print and spray your canvas, I you may want to use a digital signature because if you sign on top of the coated canvas it will probably be too noticeable and won't look great - but probably worth a try to see if you like it. Experiment with different pens, etc.
Do note that artwork hand signed by the artist, rather than from a digital signature, may hold more value to the collector.
