You should be able to use the print module to create a contact sheet template and then print to a pdf rather than a printer. In LR 3.0, the print module has several templates, including a 5x9 contact sheet -- this is 5 columns, 9 rows, similar to the traditional contact sheet. It's set up on letter size paper. If you have Acrobat installed, you can just choose Acrobat as your printer when printing, or alternatively, you can save as a pdf (lower left corner in the Apple Print dialog).
If your client is not using the latest version of Acrobat, open the file after printing, and down-save it to a version that they can open. You can use the "Reduce FIle Size" option to downsave it and to reduce the file size as well. Lightroom renders the images as thumbnail jpegs, then builds the file and saves it as a pdf.
