Filmmaker Go in combination with your custom Filemaker database/inventory control app.

Portfolio, with custom branding screens. Much better presentation tool than the built in photo app.

2Do for GTD style task lists, syncs with MobileMe or locally to your iCal calendar to do list.

Dropbox for syncing Portfolio and other files.

Those four have become my go-to apps at shows, along with Safari and Google Maps.

Other apps, like Chase's mobile banking, the Delta airlines app, food finders like Yelp and Urban Spoon are also useful while on the road. Priceline has a bidding app, but it's marginally useless.

FocalWare is very good at determining how to set up your booth in relation to the sun.Built in ephemeris works off the gps and doesn't require wifi or 3G data connectivity.
