Overall seems correct. I use Lightroom to export images at a slightly lower resolution than you do: 1732 x 1155, which is a bit higher than the iPad's native resolution of 1024 x 768. It allows some zooming of the image while not putting "too-large" images into valuable storage space on the device. For ZAPP images, which are already 1920 x 1920, no resizing will allow shows to use what has already been submitted. In a show of 200 artists, this is not insignificant. Just renaming each image with the artist's last name may take an admin a bit of time, and be prone to errors.

Dropbox is the easiest way to batch images into Portfolio. It's easier to sort and drop images into their respective folders on your local computer. Sorting within Portfolio and other maintenance tasks are a bit more time consuming.

All in all, makes sense.
