Kevin,
I've used a lot of different t-shirt transfers to canvas, with great success. My favorite is a new product called Transfer Artist Paper (TAP), which is a polymer transfer. You can get it on Amazon, or through the website of the inventor, Lesley Riley -- http://www.lesleyriley.com/store.php?cat=1 I use it a lot on the stiff canvas boards.
For canvas, actually, I prefer printing directly to inkjet treated canvas - but if you have a canvas that's already stretched a transfer would work -- you just have to make sure that you put something underneath the canvas to support it- any area that's not supported won't receive the transfer.
