I wouldn't downplay the importance of non-flash devices. The people who own these devices may actually be the demographic you are interested in connecting with.
Maybe redoing a website is actually a good idea, and better done in the beginning stages instead of later when you are more entrenched. There are non-flash websites and there are websites that are flash based but have a mirrored HTML base for those that can not view flash.
One would be wise to choose wisely.
