There are a number of contracts photographer may need, it depends on the country, and local laws, and so on. Local assignments, overseas assignments, war zone assignments, nude, etc.
Model releases are used in some parts of the world, but not in others. It is considered that if a model place her/himself in front of the camera, they have agreed to that the photos be used. USA is a very special case where people to some degree "own" their image. Apparently the requirements also vary with what state in the USA you work.
