You'll never go wrong by matching the white of your printing paper, be it bright white or a natural off-white. If you have to have some color, use a second mat underneath with a stronger color chosen from the image.
Please - NO brightly colored or color-coordinated mats on top. Nothing says "Rank talentless amateur" faster (in my humble opinion, of course).
