I spent a limited amount of time looking at this. This advise is intended
to point you in some possible directions, not to be considered actual
financial, tax, or legal recommendations. (Use at your own risk.)

Above is a link to Minnesota's Application for Business Registration. On
page 2, it states you need a Minnesota tax ID number if you . . . make
taxable sales. . . On page 4, it states "You must register to collect sales
tax if you make taxable retail sales in Minnesota. This includes sellers
outside Minnesota who . . . have a representative, agent, salesperson . . .
in Minnesota, on either a permanent or temporary basis. . . Back on page 2,
it states "State law also provides for criminal penalties for making taxable
retail sales in Minnesota before a Minnesota tax ID number is issued."
I'm not saying this to scare. I certainly can't guarantee it, but I'd be
personally surprised if they did anything to you besides accept the tax
payment -- and perhaps some type of monetary penalty.
I'd also check page 5 of these registration instructions to make sure you
weren't in a city that requires a higher percentage of sales tax to be
collected.
If I were in your situation, I'd immediately go to:
https://www.mndor.state.mn.us/tp/webreg.html
Here, you can register for a Minnesota tax ID number online. Hopefully
you'll get one right away, but I'm not sure if an actual person has to
process it to generate a tax ID number.
Then, very quickly, but perhaps a few days later, I'd go to:
https://www.mndor.state.mn.us/ur/jsp/Login.jsp -- it looks like you can
electronically file your sales tax return here AND make payment for the
sales tax.
I'd get this done as quickly as possible.
If for any reason I couldn't get this done online, I'd print out the forms,
fill them in manually, and get them mailed in with proof of mailing
(certified, return receipt) so when they come back to work they'd have
everything. I'd imaging sending in a tax return with an application for a
tax id number and a check for payment would be better than waiting.
Many states have a temporary sales tax account, or a transient vendor sales
tax account, to cover short situations like this. From the limited amount
of time I spent looking, I don't see anything like this for Minnesota.
